It was an easy day of cooking and in this dish, we prepared Shrimp Caesar Salad. This dish challenged my culinary skills by helping me learn how to cut, chop, and assemble. It was fun and delicious.
The recipe was simple and kinda went like this ...
Ingredients:
1 - 1/2 head of Roman Lettuce
1 - 1/2 lb of shrimp (16-20 count)
10 cherry tomatoes cut in half
1/4 cup Red Onion slices
1 avocado cut into chunks
1/2 tsp of Old Bay seasoning
1 tbsp olive oil
1 bottle of poppy-seed salad dressing
1/2 cup of vegan cheese (white or mozzarella)
Directions:
Mom says I need to chop up the roman lettuce into bite size slices and place in a bowl. Then cut the little tomatoes in half (they are called cherry tomatoes but they don't taste like cherries :-/ ) Place these into a separate bowl. Once this is done, I needed to slice up a red (which by the way is really purple) onion. Then came the fun part, slicing up an avocado into chunks. Now, this sucker was tricky... first I had to cut around the thing and twist to get to the inside. There was a huge ball inside (mom called that a seed -- looks like a ball to me). Then scoop out the inside and cut into chunks. We then took the shells off the shrimp and placed the shrimp in a bowl.
Soooo.... I can't turn on the stove so mom turned on the stove and I placed 1/4 tbsp of olive oil in the skillet and let it get hot. I then placed the shrimp into the skillet. While the shrimp were in the skillet, I seasoned them with Old Bay seasoning. Mom said to move the shrimp around and turn them until they turned pink. Once the shrimp cooked, I put them to the side.
Now to assemble, just take the lettuce and put it in a large bowl, then the tomatoes, onions and avocado. Toss those together and then add the shrimp, cheese and croutons. Plate on a dish and add the poppy-seed dressing to taste. Then there you have it shrimp BDAWG Shrimp Caesar Salad!
