Easy pease shrimp and beans so easy...

So today was the day of beans and shrimp.  Below is the picture of what was to be dinner.

So today was to be the day of shrimp and beans .. really easy and quick meal that took about 30 minutes to prepare. The picture on the left is from the recipe and I must say I thought this might be good ..... and boy was I right.

Shopping for the menu was pretty much an exercise in absolute patience and mom was really helping me pick out the food from the menu list we created before we left. See ... I am supposed to be getting parsley but I got cilantro. Here is the recipe.

Paprika Shrimp & Green Beans

  • 4 cups green beans

  • 3 tbsp extra-virgin olive oil

  • 1/4 cup minced garlic

  • 2 tsp paprika

  • 1 lb raw shrimp

  • 2 - 16 oz cans large butter beans

  • 1/4 cup sherry (optional)

  • 1/2 tsp salt

  • 1/2 cup chopped parsley (cilantro alternative)

Instructions: For the green beans (get the steamer pack of green beans to substitute steaming the green beans. Then heat oil in a large skillet over med-heat. Add garlic and paprika and cook stir constantly for about 20 seconds or until fragrant. Add shrimp and cook til pink approx 2 minutes . Stir in beans (green beans and butter beans), vinegar (optional not really necessary), and salt. Stir til cooked thoroughly. Enjoy !

Here is the end result it was AMAZING!! I kinda forgot to not darken the garlic in when sauteing the shrimp but the taste was yummy ... Mom added the brown rice quinoa. This was so much fun to make and the string bean and butter bean combination is like none other ...
